  • 1. Place Mulberry Sauce ingredients in medium sauce pan, save cornstarch and cold water. Cover and heat on medium-low, then reduce heat to low setting and simmer. Cook berries with other ingredients for about 20 minutes, mashing berries with a large metal spoon periodically.
  • 2. Preheat oven to 350°F. Spray an 8" or 9" square pan with non-stick cooking spray. Mix oats, flour, sugar, and baking soda. Cut in butter until evenly distributed. Add sweetened condensed milk and mix. Mixture will be slightly sticky. Pat 3/4 of cookie mixture in bottom of pan. Bake for 10-12 minutes.
  • 3. While cookie bakes, finish mashing berry sauce so no whole berries remain. Mix cornstarch and water and pour into cooking berry sauce. Stir as sauce thickens and remove from heat. After cookie has baked, remove from oven and spread berry sauce on top evenly. Drop small amounts of remaining cookie mixture over berry sauce until evenly distributed. All berry sauce will not be covered. Bake again for 20 minutes until cookie mixture has browned on top. Cool completely. Cut into 16 squares.

Other berries can be used, such as blackberries, chopped strawberries, blueberries, or raspberries. However, lemon juice amount may need to be altered with other berries.

These were fabulous! I loved the mulberries; they were a nice change from the berries normally used in baked goods.
