  • Blend ricotta & butter. Add flour 1 cup at a time, until dough is workable. Roll dough thin.
  • Using a large glass, cut out circles. Fill each with raisin/nut mixture. Fold in half and seal edges. They don't spread so you can put them fairly close on the cookie pan.
  • Bake at 350 degrees for about 20-25 minutes, until lightly golden. When completely cooled, dust with powdered sugar.

Special Equipment Needed


This is my mother-in-law's recipe and is a must for me to make at Christmas. They are delicious! The dough is very delicate and care must be taken to not puncture it with the filling. The edges should be sealed well, to avoid splitting open.
