  • 1. Cook the bacon in a large saucepan over medium heat until almost crisp, about 4 minutes. Add the onion and cook, stirring occasionally, until soft, about 3-4 minutes. Stir in the potatoes and cook 3 minutes. Add the water, clam juice, and thyme; bring to a simmer. Cover and cook until the potatoes are tender, about 12-15 minutes. Reduce heat to low. Stir in the clams and cook until the clams are heated through, about 5 minutes.
  • 2. Combine 6 Tbsp. of hot liquid from the saucepan and flour in a small bowl. Stir the mixture back into the saucepan. Increase the heat to high and bring to a boil. Cook until the soup thickens, 1-2 minutes. Reduce the heat and stir in the milk, parsley, salt, and pepper. Heat gently until the soup is hot, but do not let it come to a boil. Serve.
