Having been born in New Mexico, I grew up with this kind of guacamole. It is different than most recipes, in that it doesn’t have their sharp flavor.
I prefer using the avocados that are reduced in price for guacamole because they are riper and softer and easier to work with and have the mellow taste this dip calls for (the guacamole not me). They should have some brown (not too much) and be fairly soft to the touch.
The lime juice will add a nice flavor and help the dip keep its color longer, but isn’t necessary as the dip will disappear rapidly with or without it.
