  • Cut the avocados in half to the stone. Twist to separate, remove the stone, then quarter. Peel the skin off or spoon out the flesh into med mixing bowl.
  • Add remaining ingredients and mash against the sides of bowl with fork or spoon until desired consistency. A blender can also be used to mix if a smoother consistency is desired.

Having been born in New Mexico, I grew up with this kind of guacamole. It is different than most recipes, in that it doesn’t have their sharp flavor. I prefer using the avocados that are reduced in price for guacamole because they are riper and softer and easier to work with and have the mellow taste this dip calls for (the guacamole not me). They should have some brown (not too much) and be fairly soft to the touch. The lime juice will add a nice flavor and help the dip keep its color longer, but isn’t necessary as the dip will disappear rapidly with or without it.
