No-Bake Coconut Cheesecake

  • In a large mixing bowl, blend cream cheese with 1/4 cup milk until smooth. Add rest of milk, coconut and vanilla, mix until well blended. Add pudding and beat for about 1 minute. Stir in the Cool Whip.
  • Pour into graham cracker crust.
  • Refrigerate.

Note: if you are using low fat pudding you may want to use skim milk. I had bought several pkg. Philadelphia Cream Cheese when they were on sale and needed to use them soon. I wanted to make a no bake coconut cheesecake, but could not find a recipe for one, so I decided to invent one. Here it is. My husband loves it.
