Combine sugar, evaporated milk, butter, and cocoa in a large saucepan. Bring to a boil over medium to high heat, stirring continually, for 1 minute; remove from heat.
Add peanut butter and vanilla extract to sugar mixture and mix well. Combine the oats, coconut and walnuts in a medium bowl and mix well. Add the oats mixture to the peanut butter mixture and mix well.
Drop the batter by heaping teaspoons onto waxed paper. Let stand until firm, about 30 minutes.
VARIATION:
For added crunch, use chunky peanut butter.
