When I made this the first time I made it for an office bake sale. I used plain vanilla pudding that time. The second time I used French Vanilla. I like the French Vanilla much better. Some of the crackers will need to be broken to fit in the dish in order to cover the area. The crackers will soften and many who ate it said it DID remind them of an Eclair.
This is one of the simpliest recipes I have ever made. Lite products and sugar free can be used with just as good a result. Enjoy!
