  • Prepare graham cracker crust from Jell-O cheesecake mix according to package directions and press into bottom of 7x11-inch pan.
  • Combine sugar and cornstarch in cooking pot. Stir in rhubarb and water. Cook and stir until thickened. Reduce heat, cooking and stirring for 2-3 minutes longer, or until rhubarb is soft (A few drops of red food coloring can be added if desired). Cool. Spread rhubarb mixture on crust.
  • Fold together Cool Whip and miniature marshmallows. Spoon over rhubarb mixture.
  • Prepare cheesecake filling from mix according to package directions. Spread on top of dessert.
  • Refrigerate for several hours.

Notes

A easy no bake dessert for spring.
