  • Thaw and drain spinach. In large bowl, mix cottage cheese, egg, spinach, salt, oregano and pepper.
  • In greased pan 9x13-inch (or 2 - 9-inch square), layer 1/3 cup sauce on pan bottom. Place a layer of uncooked noodles on sauce to cover - breaking them if necessary. Spread 1/3 of spinach mixture on noodles. Spread with sauce and 1/3 of mozzarella cheese. Spread spaghetti sauce on top. Cover with another layer of noodles, 1/3 of spinach mixture, sauce and 1/3 of cheese. Repeat for third layer. Sprinkle parmesan cheese on top of mozzarella cheese to finish. Pour 1 cup cold water around edge of pan. Cover tightly with aluminum foil.
  • Bake 350 degree for l hour 15 minutes. Let stand 15 minutes before serving. Heat extra spaghetti sauce to put on top, if desired.

Notes

Lasagna can be frozen before it is baked. Completely thaw before starting baking time. Keep covered at all times. I make this lasagna for company quite often and they always love it. I like to have a 9-inch square one in the freezer for a fast dinner.
