  • 1. Cook chicken any way you want or use leftovers. Cook rice any way you like or use leftovers. Instant or Minute Rice is great.
  • 2. Combine soup, mayo/sour cream, milk, onion, peas and tomato in a medium sized bowl. Fold in the chicken, rice and 1 cup of the cheese. Salt and pepper to taste.
  • 3. Pour into a medium sized baking dish and top with the last cup of cheese.
  • 4. Bake 25-30 minutes on 350°F uncovered.


I make this dish low fat. I use fat free soup and milk as well as reduced fat cheese and sour cream. I also use Brown Minute Rice. It tastes awesome either way. I also play around with the frozen veggies. I still like the peas best.

    This was very good. My family seemed to enjoy it. I think I will try it with bacon next time that sounds yummy.

    I made this with a little bit of a twist adding bacon to the recipe and not using any of the veggies. It came out awesome and I definately plan on making it again, maybe with a little bit of broccoli added to the mix. Definately recommend it to anyone that likes chicken and rice!!
