  • Cut off the tops of the peppers and clean the peppers. (I chop up the parts of the tops that are useable.) Brown together the ground beef, diced onion, and chopped up pepper tops. In another pan, follow the directions on the package for making the Spanish rice. Blend the Spanish rice into the ground beef mixture.
  • Fill the peppers and top with shredded cheese. Put the peppers in a brownie pan or casserole dish. Add some water (about 1/4 inch). Cover the pan with foil.
  • Bake at 350°F for 40 min or until the peppers are softened.

Serve with tossed salad, Italian bread, and corn.
