  • Place chicken breast, 1 at a time, between 2 sheets of waxed paper. Beat with a rolling pin until even thickness. Place 2 slices of ham on the flattened chicken. Cover ham with 1 slice of mozzarella (or 1/4 cup of shredded). Roll short side to make a jelly roll. Use toothpick to keep together. Repeat with all chicken breasts.
  • Mix bread crumbs, parmesan cheese, dash of salt, pepper, garlic powder, and onion powder. Roll chicken in crumbs to coat evenly.
  • Heat oil in skillet. Place chicken in oil with the "open" side down (the side with the toothpick). Fry about 1 minute, then flip and fry about 1 minute on the other sides.
  • Preheat oven to 350 degrees F. Place rolls on a cookie sheet covered with aluminum foil. Bake 20 minutes. Remove from oven and cover with remaining cheese. Place in oven for 5 minutes, or until cheese is melted.


This recipe may not be "low calorie", but it does use a minimal amount of oil and no butter/margarine or egg. You can also drain the chicken on a paper towel before baking.
