  • In a large bowl, mix together 4 sticks of the butter, sugar, eggs, vanilla, and salt. Mix together well. Add the flour. Place foil over 11x14 cookie sheet (make sure cookie sheet has lip). Roll dough out evenly along foil (dough will be thick).
  • Bake dough for 20 minutes at 275-300 degrees.
  • While dough is baking, take the last stick of butter and melt in a sauce pan. Add the brown sugar and honey. Stir quickly. Let the sauce simmer for 10 minutes. While sauce is cooking, cut up nuts and set aside. Add the cup of heavy cream to the sauce and stir. Add nuts to sauce.
  • Pour sauce over the dough and place back in oven for 25 minutes (sauce will bubble). Cool cookies down on cooling rack or counter top. Remove cold cookies from pan. Cut the cookies into 6 or 7 rows horizontally, then cut the rows at an angle to make diamond shapes.

Special Equipment Needed


When removing cookies from foil, I let them cool down completly, then I losen up the edges of the foil and slide a big spatula under it to help remove the foil from the cookie. If you let the dough cool down enough, the cookies sre easier to cut.
