  • Preheat oven to 350°F. Lightly spray cookie sheets with cooking spray. Beat together margarine and sugar or sugar substitute until creamy. Beat in egg or substitute. Add applesauce, apple concentrate and vanilla, beating well. Combine flour, baking soda, cinnamon and salt and blend into egg mixture. Stir in oats and raisins (or Craisins).
  • Drop by teaspoonfuls onto cookie sheets.
  • Bake 15 -17 minutes or until cookies are firm to the touch and lightly browned. Cool on wire racks. Store covered.

Notes

If you use the substitutes, this makes a good Diabetic cookie. 2 per serving.
