  • Mix all dry, and then sift into a large bowl. Beat eggs, and then add to bowl. You can flavor these with any spice or herb you want, like garlic or onion powder. Mix till you have a ball.
  • Put dough on a floured surface. Take a rolling pin, and roll out to as thick as you want (1/8th inch) is best. Then roll up like a jelly roll, and then cut with a knife the noodles as thick as you would like. Remember these noodles will swell up when cooked.
  • After you have cut your noodles, separate them into a bag with flour in it. If you don't use all your noodles, freeze the rest or they will go bad. These are best used in soups.

Special Equipment Needed


If your noodles seem to be too dry, add another egg. As long as you freeze these they will keep forever. You don't have to just cut string noodles, you could cut any shape you want, and make it interesting. These noodles will also thicken up your soup. They are great for old fashion chicken noodle soup.
