  • In a 10-inch oven proof skillet heat 1 Tbsp. of oil over medium heat. Add potatoes and saute 10 minutes. Add garlic, peppers and onions. Saute until onions are golden, about ten minutes. Add herbs and salt and pepper. Let cool five minutes.
  • Preheat broiler. Lightly beat the eggs. Gently stir in the cooked veggies. Heat 1 Tbsp. oil over high heat for one minute. Add eggs mixture and reduce heat to medium. Cook about 4 minutes.
  • Sprinkle omelet with cheese. You can also add cooked crumbled Italian sausage. Place skillet under the broiler about 8 inches from the flame. Cook until top starts to brown. Remove and cut into serving pieces. Salsa may be added if desired at this point. You do not fold this omelet over.
