  • Fully cook and drain pork sausage, set aside. Cook 12 large eggs, place in large mixing bowl. Add drained sausage and two 1/4" thick slices of Velveeta Cheese, and stir. You may need to microwave a few seconds to get cheese to melt.
  • Place 1/4 cup (more or less depending on size of shells) of egg/sausage mixture on tortilla shell and add a thin slice of Velveeta (one slice cut in half works great). Fill and wrap each of the remaining shells the same.
  • Place in snack size zip bags and freeze. Remove from zip bag and microwave on plate when ready to eat.

Special Equipment Needed


Amount of Velveeta varies, depending on preference. Peppers, onions, and other veggies could be added. It works best to have all shells layed out and fill at the same time to get an equal amount in each shell before wrapping up. Breakfast burritos can be thawed out the night before in the refrigerator or microwave frozen before eating. Thawed out they take about 90 seconds to heat, longer if frozen.
