The longer this sits, the plumper the dried fruit gets, and the firmer the cheese gets.
Substitute any dried or fresh fruit; I like the combination of dried dates and fresh bananas. (If you have more fresh fruit than dried, the parfait won't firm up)
If you get plain yogurt, you can flavor it any way you like. I like almond: 1/4 cup plain yogurt, 1/4 tsp. almond extract, 2 Tbsp. Splenda-mix all ingredients, and enjoy.
