  • Puree the cottage cheese until smooth. Transfer to a bowl and add honey.
  • In a sealable 1 cup container (an 8 oz. empty Philadelphia Cream Cheese Tub is what I use), sprinkle 1 Tbsp. of the dried fruit on the bottom, then 1 tsp. of the oatmeal over that. Spoon 1/4 cup of the cottage cheese over the fruit. Sprinkle another tsp. of the oatmeal over the cottage cheese, and evenly distribute the blueberries over that.
  • Cover with yogurt. Sprinkle remaining oatmeal over the yogurt, and spoon on remaining cottage cheese. Evenly distribute dried fruit over top, cover, and refrigerate overnight.

Special Equipment Needed


The longer this sits, the plumper the dried fruit gets, and the firmer the cheese gets. Substitute any dried or fresh fruit; I like the combination of dried dates and fresh bananas. (If you have more fresh fruit than dried, the parfait won't firm up) If you get plain yogurt, you can flavor it any way you like. I like almond: 1/4 cup plain yogurt, 1/4 tsp. almond extract, 2 Tbsp. Splenda-mix all ingredients, and enjoy.
