  • 1. Saute potatoes and onions with butter or oil till tender and slightly browned.
  • 2. Crack eggs into a bowl, add milk and whisk.
  • 3. Pour over cooked potatoes.
  • 4. Gently distribute ingredients evenly in the pan. Have any optional add-ins diced and ready to drop into the egg mixture before it sets in around the potatoes.
  • 5. Cover the pan and turn heat to medium/medium low.
  • 6. Leave lid on until checking shows the eggs have set. (approx. 8 minutes)
  • 7. Season to taste (i.e. garlic salt, onion salt, table salt, pepper, etc.)

Have overnight guests? A basic meal of eggs, milk, and hash-browns in a frying pan, can be turned into whatever you want. And adjusted more or less to the size of the pan you're using. Can easily be doubled. Adjust the # of eggs used so the add-ins are completely set, and to accommodate the size of crowd that will LOVE it. Plain and simple is terrific and fast. But it's a crowd pleaser to have grated cheese, lettuce, salsa, guacamole, or any other fun toppings ready to take it over the top!
