  • In a 12x2" oven-proof skillet (with lid), brown ground beef and drain any excess grease. Add beans, tomatoes, water, and taco seasoning. Bring mixture to a boil. Add rice and cover with lid. Remove from heat and let rest for 5 minutes or until rice is tender and has absorbed excess moisture.
  • Remove lid and take half of the beef mixture out of the pan and set aside in a medium sized bowl. Leave the remaining beef mixture in the skillet and cover with half of the tortilla wedges and half of the cheese.
  • Layer on top remaining beef mixture and tortillas. Cover tortillas with salsa and remaining cheese. Cover with lid and bake for 20 minutes. Add desired toppings and serve.

Special Equipment Needed


Increase the heat by adding Ro*Tel tomatoes or a medium salsa.
