Pancetta Turkey Burgers with a Jalapeno Avocado Mayo and Fresh Broccoli Slaw

  • To begin, put both packages of ground turkey in a large mixing bowl, and then add the olive oil, garlic, balsamic vinegar, salt, and pepper. Mix to combine (and yes, get your hands dirty, it never hurt anything).
  • Then shape the burgers by packing the mix into a 1/2 cup measure (perfect patties every time), then shape the patties into flat discs and place a piece of pancetta on each side of the patties.
  • You will cook these on the grill for approximately 6 minutes a side. (Don't hold me against this timing though as every grill is different, just pull out the trusty thermometer.)
  • While those cook you can put together the jalapeno avocado mayo and the broccoli slaw. To start you will seed and mince the jalapenos and slice around the avocado, removing the pit, and scooping out the green goodness. You will then mash the avocados and add the jalapeno and the mashed garlic along with your salt, pepper, and mayo.
  • Then to put the slaw together you just add the slaw to a large bowl and add the lime juice olive oil and salt and pepper. That’s right. It is simple and adds a beauty and freshness to the delish burger. I love it.
  • Now after your burger is done and you toasted your whole wheat buns (there's nothing worse than a cold bun with a hot burger) you can now put it together. I would start with some of your special mayo on the bottom, following your burger, special "possible" toppings, and then your slaw (followed by the top bun of course…lol):) Enjoy an amazing and juicy turkey burger.
