  • In medium bowl, mix together 2 cups flour, seasoning, onion powder, salt, pepper, and paprika until well blended.
  • Place remaining cup of flour in a plastic baggie. Pour milk into another medium size bowl. Heat oil in a large skillet over low to medium heat.
  • Coat all trout evenly in bag with flour. Dip each into milk, making sure to completely cover. Next, coat all with seasoned flour mixture. Dip into milk again and recoat once more with seasoned flour mixture.
  • Place into hot oil. Cook until browned, turning once to sure even cooking. Finish cooking until meat is no longer pink, about 10 minutes. Serve hot with lemon wedges and tartar sauce on the side.


This is excellent with cornbread, and wild greens like milkweed or dandelion. A favorite in my family for generations. This is also good for fried chicken.
