  • Preheat 1 Tbsp. olive oil in nonstick skillet over medium-high heat. Mix bread crumbs, cheese, herbs, and 1 tsp. (more or less to make SLIGHTLY moist) olive oil to make crumb coating for chicken.
  • Dip chicken in milk, then in crumb mixture to coat.
  • Fry 1 or 2 pieces of chicken until golden brown (2 minutes), then flip and cook until done (2 minutes more). For each batch of chicken, add another Tbsp of oil to the pan.

Notes

Boneless skinless chicken breasts pounded thin can also be used, but may require a slightly longer cooking time. For a more substantial breading, dip in a mixture of 1 beaten egg and 1/4 cup milk, instead of plain milk, before coating in crumb mixture.

Rated 5 out of 5 by from Great recipes! Great recipes! This could also be called Crispy Italian Chicken! For the Santa Fe chicken I used bread crumbs and 2-3 tsps of taco seasoning. Cooking time was about 25 minutes. Then at the end, I put a couple of tablespoons of salsa on each breast along with the Mexican cheese. For the Italian chicken, I put some Italian dried seasoning 2-3 tsps in the bread crumbs. After cooking for the alloted time, I put a couple of tablespoons of spaghetti sauce on each breast along with either provolone or mozzrella. Have fun and enjoy!

My husband and son enjoyed it and told me to make this again anytime. Nice recipe to make for a family who can use a dinner because of a death, new baby or single mom and don't forget to give the recipe too!

Rated 4 out of 5 by from Very good. Very good. My husband loved it. I did use Italian bread crumbs with added Parmesan cheese and a few spices (I didn't have any saltines). Very easy and tasty. Will be making it again. It takes very similar to chicken Parmesan!
