  • Pasta:
  • Boil for 8 minutes in rapidly boiling, salted water. Do not drain or discard water.
  • To Prepare the Veggies:
  • Preheat oven to 450 degrees. Cut veggies into strips that are ¼" inch thickness approximately and 3" long. You want them to all be the same size so they all take the same amount of time to cook.
  • Lay on a cookie sheet. Coat with olive oil and sprinkle some Herbs de Provence or Italian seasoning. Rub in with fingers to equally coat the veggies. Divide the veggies on to 2 cookie sheets so they roast in a single layer in the oven. Roast for 10 minutes. Stir veggies and arrange flat on cookie sheet again. Roast for another 10 minutes till caramelized.
  • In a bowl, spoon the pasta in straight from the pot. Don’t rinse or drain from pasta water. Again, do not discard water. Add Veggies. Mix together gently with tongs.
  • Stir in cheese, and add 1 spoonful of the pasta water. This will create a sauce. Add more pasta water as needed.

Special Equipment Needed


If you like, add some minced basil and parsley as you serve, with extra cheese. You can drizzle a little more olive oil over it as well. Salt and pepper to taste.
