  • Brown ground meat in skillet. Saute onion & peppers in skillet with meat. Add 2 1/2 Tbsp. sofrito, chicken bouillon, and sazon. Simmer about 3 minutes. Add tomato sauce and simmer 5 minutes. Remove from heat set aside.
  • Cut plantains in half. Peel and then slice length ways in thin slices. Brown in skillet both sides. Set aside. Whip 5 eggs with 1 tsp. sofrito.
  • Spray 9x13 oblong pan with pam. Pour eggs into pan. Top with half meat mixture and half plantains, and then remaining meat and plantains. Whip remaining 5 eggs with 1 tsp. sofrito pour over top meat and plantains. Garnish with cilantro and or additional peppers and onion if desired.
  • Bake in 350°F oven for about 45 to 60 minutes until eggs are set and slightly golden brown on top. Knife inserted will come out clean.


I serve with rice with gandules and hot fresh bread. Also great with fruit salad and bread. Excellent for breakfast, brunch or dinner.
