  • 1. Make Filling: In medium bowl, combine peaches, 1/2 cup sugar, 2 Tbsp. flour, lemon juice, vanilla and almond extracts, cinnamon, 1/4 tsp. salt, and 1/4 cup water. Turn into 8-by-8-by-2-inch baking dish. Dot with 2 Tbsp. butter.
  • 2. Preheat oven to 375 degrees.
  • 3. Make Batter: In medium bowl, combine all batter ingredients; beat with wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly. (Batter will spread during baking.)
  • 4. Bake 35 to 40 minutes, or until peaches are tender and crust is golden. Serve warm, with cream or vanilla ice cream.
  • *Or use 2 cans (1 lb. 14 oz. size) sliced peaches, drained, reserving 1/4 cup syrup to use instead of water in Step 1.

    I'M SORRY THAT I ONLY HAD ONE CAN OF PEACHES AND HAD TO CUT THIS RECIPE DOWN. MY BROTHER AND I DEVOURED IT IN LESS THAN A DAY. I WILL BE MAKING THIS AGAIN AND AGAIN. I WILL MOST LIKELY TRY SOME VARIATIONS, LIKE APPLES ETC.
