  • 1. Simmer the carrots in water until just tender. Drain the carrots (save half a cup of the cooking liquid), and place in a bowl.
  • 2. Combine the carrots with the honey, shallots, pecans, chives, salt and pepper in a large pan over medium-high heat. Add enough of the cooking liquid to make a smooth, light, even glaze. Toss to coat evenly and serve.
  • Note: Raw minced shallots can have a harsh flavor. To give them a more subtle flavor, cook them over low heat in just enough broth to barely moisten them, until they become translucent and the broth cooks away.
