  • Preheat over to 350 F. In 3-quart saucepan, cook maple syrup, sugar, and butter over medium heat until mixture boils. Reduce heat to medium-low and cook 5 minutes longer, stirring often.
  • In a large bowl, with whisk, beat eggs slightly, slowly whisk in hot syrup mixture. Stir in vanilla.
  • Place unbaked crust on cookie sheet (important). Place pecans in crust. Pour syrup mixture over pecans.
  • Bake pie 45-50 minutes or until filling is just set. Cool pie on wire rack for at least 1 hour.
  • Whip cream with confectioners' sugar and bourbon. Serve pie with a dollop of whip cream mixture on each slice.
