  • Cook pasta according to package directions. Meanwhile, rub steaks with 2 Tbsp. olive oil and coat with pepper. Heat saute skillet. Add steaks and saute to medium rare and remove.
  • Add the rest of olive oil to skillet and saute vegetables and spices for approximately 4 to 5 minutes. Do not over cook.
  • In large mixing bowl, add hot pasta and top vegetable mixture. Cut steaks into 1 and 1/2-inch strips and add to salad. Pour in dressing and mix well. Serve immediately.

Special Equipment Needed


To cook pasta: 1. Bring water (salt is optional) to a rapid boil using approximately 1 quart of water for each 4 ounces of dry penne rigate. 2. Add penne rigate. 3. Return water to a rapid boil. Cook uncovered approximately 10 to 20 minutes, stirring frequently. 4. Drain. For salads and baked dishes, rinse in cold water. To pour over sauce, rinse in hot water.
