  • Mix taco seasoning, juice of lime and 1 Tbsp. vegetable oil in plastic sealable bag. Add chicken and marinade 15 minutes. Preheat oven to 350 degrees F and grease baking dish.
  • Remove chicken and discard marinade. Pound chicken to 1/4" thickness. Cut cheese into 1 oz. strips and place in the center of each breast. Roll up and secure with string or toothpicks. Heat remaining oil in skillet and brown chicken on all sides. Transfer to greased baking dish.*
  • Bake uncovered at 350 degrees F for 25-30 minutes or until juice runs clear. Discard string or toothpicks before serving.

*If freezing, place in freezer container following this step with baking instructions. Recommended sides are Spanish rice and refried beans, or black beans and yellow hominy.
