  • Melt butter in a large pot. Add onions, celery, green pepper and ham. Saute and stir mixture until vegetables are tender.
  • Add water and bouillon cubes. Cook until bouillon cubes dissolve in mixture.
  • Add remaining ingredients. Simmer for 20 minutes and serve.

During the cold winters experienced by the colonists, they often ate soups like this one. An old legend says that George Washington created the original Pepper Pot soup. The soup was a huge success because it required few ingredients. Tripe was the only meat available at the time. Our daughter made this for a colonial project she worked on for American History in 8th grade. She made a double recipe and came home with barely enough left for us to try.
