  • Broil or grill chicken, then cut into strips. Add the strips to a bowl with the pesto and toss.
  • Lay each tortilla or flatbread out on a plate. Pour 1/4 cup ranch dressing on each. Then add 1/4 of the lettuce and 1/4 of the chopped tomato to each. Add strips of the pesto chicken, fold, and serve!

Special Equipment Needed


*I use sun-dried tomato tortillas, but flatbread folds easier. *Microwave the tortillas before creating the wraps. They are easier to fold when warm. *Homemade pesto sauce is pretty easy to make: 1 cup tightly packed fresh basil leaves 2 cloves garlic 1 tablespoon olive oil 2 tablespoons fat free Italian dressing Blend in a processor until chopped.
