  • Saute onions and celery in butter in large Dutch oven. Add rest of ingredients except milk and cheese. Cover and simmer 20 minutes.
  • Remove from heat and slightly mash vegetables with a potato masher.
  • Add milk and cheese and stir constantly until cheese melts.

Special Equipment Needed


When mashing vegetables you only want to do it a few times, just enough to make the soup thicker. You still want to have chunks of potatoes and carrots! My young teenage boys tell me this soup is "phat" meaning good! Now they ask me to make that "Phat Potato Soup." So this is what our family now calls it! I share this with all my friends and family. It's great on a cold day, for a loved one who isn't feeling well, or just to sit down and eat any ol time. I hope you like it as much as our family does! Kathleen Cadwallader
