  • Bake cake according to package directions (using an 8 x 12 pan). Let cool for 30 minutes.
  • While cake is baking and cooling, mix together cream cheese and drained crushed pineapple.
  • Slice the rounded top off the cake so it is flat and the "crust" is off the top of the cake. Spread cheese mixture on top of cake. Mix together pudding and milk, spread over the cream cheese mixture. Spread Cool Whip on top. Keep refrigerated.

Notes

Though this cake may be eaten right away it is better if it cools in the refrigerator for an hour or two. I also thinks it tastes better the second day as the "flavors" have soaked into the cake more! A light, refreshing dessert that is rich but not too sweet and the coolness is especially welcome on a hot summer day!
