  • Drain pineapple, save juice and place 1 slice in bottom of 1 1/4 quart bowl. Line side of bowl with 5 slices of pineapple and 6 half of maraschino cherries in center of each slices.
  • Place a smaller bowl (2 1/2 cup bowl) in the center of a large bowl and weight it down with something heavy. Dissolve lemon gelatin in hot water. Add 1 cup cold and pour between the two bowls. Chill until firm and remove smaller bowl, by filling with lukewarm water and lifting out in 1/2 minute or less.
  • Soften unflavored gelatin in 2 tablespoons cold water 5 minutes; add sugar and hot pineapple juice and stir until gelatin is dissolved. Add remaining pineapples and remaining maraschino cherries. Chill; when mixture begins to thicken, fold in whipped cream, and serve.
