  • Mix pistachio pudding with the crushed pineapple until well disolved. Add 2 cups of Cool Whip Topping and stir slightly to incorporate.
  • Spoon into ready baked crust.
  • Refrigerate 2-3 hours.

Special Equipment Needed


Optional: Mix remaining Cool Whip Topping with 1-2 drops of food coloring and fill a decorating bag with a decorating tip. Pipe topping around top edge of pie.

Rated 5 out of 5 by from Easy and delcious!! A co-worker made this pie a while ago, and I fell in love with it, since then I've been searching for this recipe. Halleluiah, I found it!. My family loves it as much as I do. It's so easy and light. Perfect after a heavy meal and in summer. The presentation is beautiful. Could even serve it at special, important occasions . Individual, small pies make for a "catered" presentation. Of course, the decorative maraschino cherry completes the look.
