  • Clean the chicken. Season the chicken will all the seasoning ingredients. Bring the water to a boil, add 2 tablespoon of salt and the 2 tablespoon of oil to the boiling water. Peel the green plantains, and cube it in 1 inch pieces. Add the plantains to the water and let it cook for 15 minutes or until soft. Mash the plantains with a masher, let it cool.
  • Stuff the chicken with the mashed plantains. Pinch together the excess skin with tooth picks to hold the stuffing.
  • Roast chicken 2 1/2 hr. in preheated oven at 325°F. until golden. Serve with Caesar Salad and garlic roasted Bread.

Notes

You can add cooked bacon or garlic or ham clippings to the mashed platain for added flavor.
