  • Beat shortening and sugar in large bowl until fluffy. Stir in eggs, pumpkin, and water, mixing well. Add flour, salt, baking soda, baking powder, cinnamon and cloves gradually, mixing well. Stir in nuts and/or raisins.
  • Grease and flour two large loaf pans, and fill 3/4 full with mixture.
  • Bake in center rack of preheated 350 degree F oven for 1 hour, 10 minutes, or until loaf tests done. Cool on wire racks.

Notes

Floured baking spray is an effective alternative to greasing/flouring pans. An alternative for bakeware: 1 pound metal coffee cans, greased and floured (or sprayed), fill 1/2 full of mixture. Makes 4 round loaves, and may be baked at same time. Storage: This bread is best stored when wrapped in plastic wrap, then again in foil and placed in the refrigerator. Bread will last up to 2 weeks refrigerated.
