  • In a large saucepan, combine lemon zest, cinnamon, allspice, pepper, cider and 1 cup water. Add pears and cover with waxed paper (this will prevent discoloring).
  • Bring to simmering. Cook, turning pears occassionally, until easily pierced with the tip of a knife, but not falling apart, about 20 minutes. (Timing may vary depending upon ripeness of pears.)
  • Remove pears from liquid and transfer to a large bowl. Raise heat to high; boil cider mixture until reduced to a syrup, about 15 minutes. Discard cinnamon. Pour syrup over pears; refreigerate.
  • Slice off a sliver from the bottom of each pear so it stands upright. Serve with lemon sorbet if desired.


These keep for a week in the fridge, whole or, if you like, sliced and stroed in their syrup. Makes 8 servings, each 128 calories, .6 gram fat, .6 gram protein, 32.4 grams carbs, 3.4 grams fiber
