  • 1. Bring broth, cream, and 1 Tbsp. butter, salt, and 1/2 tsp. pepper or paprika to a boil over moderate-to-high heat.
  • 2. Stir in cornmeal, corn, and onion. Reduce heat to medium and cook for 10 minutes (or until thickened), stirring frequently.
  • 3. Stir in 1 Tbsp. butter, flour, remaining pepper (or paprika) and Cheddar Cuts.
  • 4. If desired, pour into a baking dish and dot with remaining butter. Bake at 350 degrees until top is browned. Serve hot.


This recipe is sold as a high-priced delicacy in many fine Italian restaurants. My version is responsibly priced and tastes just as good!
