  • In large 2 qt. serving bowl, mix 1/2 cup milk with pudding mix until smooth. It will congeal quickly. Stir in tub of Cool Whip until well blended.
  • Remove the seeds from the pomegranate, wash and dry the grapes, and chop the 2 apples. Do not use Delicious brand apples, they get mushy.
  • Combine the fruit, marshmallows and pudding, stirring gently with a spatula to avoid crushing the grapes. Add nuts if desired. Save a few pomegranate seeds to garnish the top. Serve and wait for the oo's and aahs.


This is an adaptation of a salad that my Mother always made for Christmas. She used real whipping cream, and it would not hold up for use as leftovers because the whip cream would liquefy. She used maraschino cherries, both red and green in the salad and for garnish, but they were too juicy. Pomegranates were in the store at the time I was working on the recipe, and it made a perfect match. I was searching for a way to make the cream base hold up, and found that instant pudding mix was the answer. Vanilla was a good choice to start with, but when the cheesecake flavor came out, my husband raved over it. It is now a family tradition that my daughter is also passing on to others.
