  • Trim the pork if necessary and cut along one side to open up the fillet. Melt the butter and add the onions. Cook until tender without browning. Transfer to a mixing bowl.
  • Add the breadcrumbs, tarragon, apricots, grapes and garlic. Season and mix together. Place along one side of the meat. Cover with the other half and tie along at several intervals with string.
  • Place in a roasting tin. Pour the oil over the meat, cover with foil and bake in a preheated oven at temperature 350°F for 40 minutes. To serve, remove string and slice meat into medallions. Garnish with halves of grapes and sprigs of fresh tarragon.
