  • Preheat oven to 325 degrees Farenheit. Salt roast and place roast in large roasting pan. Score the roast in 1 inch slices about 1/2 inch into roast in opposite directions making diamond shapes on top of roast. In each point of diamond place a black peppercorn, pushing into the roast slightly so that peppercorn stays in place.
  • At same time combine in 3 qt saucepan orange juice, 2 cups water, apricots and bring to a boil. Combine in a small cup the 1/4 cup water and cornstarch. Mix well. When combined, add to orange juice mixture to thicken. Cook for about 5 minutes. Pour sauce over roast. Place in oven for 2 hours, basting sauce over roast every 20-30 minutes.
  • During last hour of roast cooking, boil water for stuffing and place celery, margarine or butter and onion in water. When mixture comes to a boil add seasoning packets, stuffing and egg. Fluff with fork and 1/2 hour before before roast is done, place stuffing around the roast and continue roasting meat. Serve roast surrounded by stuffing.


This is a family favorite that we always serve the Sunday between Christmas and New Years when my family has had their fill of ham and turkey and want something different but still special.
