  • Cut Butt Roast lengthwise half way through, next mix all of the seasonings well in a small bowl, apply half to inside of roast, and tie up roast in four places down the entire length to hold seasonings in or put roast in Butchers netting. Next apply remaining seasonings to outside of roast.
  • Place roast in shallow baking dish and bake uncovered at 350 degrees F for 2 to 2-1/2 hours or until done (170 degrees F internal temp). Remove from oven and allow to cool.
  • Slice thin and serve on a large hard roll or toasted bun. I like to refrigerate roast overnight and slice thin like lunchmeat and serve cold on bun with ketchup. I have also cooked the roast using indirect heat on the charcoal grill, this is truly excellent. It tastes somewhat smoky with a pink smokeband and very delish. I hope you enjoy!!

Notes

Also the drippings from baking makes excellent porketta gravy!
