  • Clean out the gills on the mushrooms, and remove the stems. Sprinkle the mushrooms with olive oil. Broil the mushrooms for 5 minutes.
  • Brown the breakfast sausage with the chopped onion. Drain off the fat. Add the Italian seasoning. Add the Velveeta and stir until the cheese melts.
  • Fill the mushroom caps with the sausage mixture. Return the mushrooms to the broiler for an additional 5 minutes.

Notes

Serve with mashed or baked potato and salad or hot vegetable.
