  • Preheat oven to 350°F. Slowly melt butter in small pan or microwave. In large bowl mix potatoes, onions, sour cream, cheddar cheese, & mushroom soup. (If potatoes are somewhat defrosted it'll go faster). Lastly, pour half of melted butter into mixture & mix again.
  • Pour entire mixture into 13 x 9 inch baking pan. A slightly larger pan will also work fine. Crush corn flakes by whatever method works for you....stomping plastic bag on floor, crushing in bowl with bottom of mug, etc. Add remaining half of melted butter to corn flakes, mixing well. Then sprinkle over potato mixture in large pan.
  • Bake for 1 hour.

Special Equipment Needed


You can substitute with "light" sour cream, margarine for butter, & low sodium soup if preferred. The end result will still be good, but not AS good. It's a rich & wonderful dish, using the most basic of ingredients....that's the beauty of it! Diet the rest of the year, but enjoy this as it is. (My personal opinion only.)
