  • Peel and wash potatoes. Use a electric shredder to shred the potatoes. Put in a strainer so excess potato water can escape, but you can leave some potato water in it. Put the shredded potatoes in a big mixing bowl and add: whole eggs, salt, pepper, onions, parsley and flour or oatmeal, mix well.
  • In a frying pan (non stick tefal) add the oil enough so the cookies will float. Use a Tbsp. to spread the mixture in the pan (1 cookie should only be 2-3 inch in diameter, then you should get 4 cookies in one big frying pan.
  • Fry them on each side until they are golden brown. Remove from pan and let them drip off on a kitchen paper towel. After you got the whole batch done, you start all over again...with adding more oil..then by now you used it all....and let them fry until crisp brown ( but not burned ). Remove and serve immediately. Bon appetit!


It's a job to stay at the stove and watch the potato cookies...it's a good recipe for the winter along goes a hot Vegetable soup . !!!! Enjoy
