  • Boil water for potatoes. You can choose to leave the skin on or off, but it takes a lot less time if you leave the skin on. Cut potatoes in half. Once water has started to boil, put in potatoes, as well as some salt. Cut sausage in slices, and set aside.
  • In a sauce pan, put about 4 tsp. of butter in pan on high heat. When butter begins to sizzle, add in sausage. Cut a handful of flat parsley. In a bowl, mix shrimp, parsley, and Cajun spice thoroughly. Add shrimp to pan with sausage. Stir around for even cooking.
  • Drain potatoes, leaving a little water in pot. Once drained, began mashing potatoes, until little lumps are left. Add milk and 3 tsp. of butter. Add salt to taste. When all shrimp are pink, and curled, add beer to pan. Add the shrimp and sausage mixture to mashed potatoes. Mix together. Taste to make sure you don't need any more salt. Add more parsley before serving.


If red potatoes aren't available, use russet, but cooking time will take longer because you have to peel them. Beer is optional, just used for taste. It doesn't have to be fresh parsley, but if it is dried, use less, and mix in at the end.
