  • Preheat oven to 350 degrees. Place stick of butter in 4-or 5-qt. roasting pan, place in oven to melt. In bowl mix sour cream, mayonnaise, can of soup, both chopped onions, garlic powder and 2 and 1/2 cups of grated cheese. Set aside.
  • Once butter has melted, spread hash brown potatoes on top, sprinkle chopped broccoli over potatoes, pour the sour cream mixture over all, spreading to cover the entire top of pan. Sprinkle the rest of cheese, cracker crumbs and pour 1/2 cup of melted butter over that. Cover with aluminum foil.
  • Bake for 35 - 40 minutes. Remove foil and bake another 15-20 minutes or till hot and bubbly and top has browned.

I made this recipe up last week when fixing dinner and I didn't want to dirty another pan just to fix broccoli. So, I decided to jazz up this regular hash brown casserole by adding the broccoli to it. The next day we had dinner with friends and I brought the remaining casserole with me. Everyone raved about it and said it kind of tasted like a loaded baked potato or even a pot pie! Then we started coming up with other ideas to jazz up this casserole. We hit on adding chicken, or using ham & Swiss cheese. Also, I thought it might be good to add corned beef slices, sauerkraut, Thousand Island dressing in the cream mix part and shredded Swiss cheese! In fact, I think I'll try it this weekend! This recipe has a lot of ingredients, but it really isn't difficult to make! Just about everything is in a can, bag or prepackaged for you. The only real work is chopping the onions! I hope you enjoy it as much as we did. It is very rich but oh what good comfort food!
