  • Take each fig half and spread about 1/2 a tsp. of chevre cheese on the flat side. Place 1 to 2 leaves of rosemary on cheese side of each piece. Place cheese side down in the center of a piece of prosciutto and wrap like a purse. Repeat with remaining pieces.
  • Place truffle oil in saute pan on medium-high heat. Carefully place wraps into pan watching for hot oil. Cook until one side caramelizes (about 2 to 3 minutes) then turn each piece. Cook until second side is caramelized (another 2 to 3 minutes) and then remove from heat. Serve while hot.


If you really want a wow factor, when you serve these, you can take a little extra time and a little toothpick... Once they are cooked, poke a hole in the top of each piece with the toothpick and make a circular motion to slightly widen the hole. Break apart a stem of rosemary so that it is a bunch of about 1 inch of stems with little leaves at the top. Almost like little trees... Take then stem side and carefully put one down into each of the holes you made. If the rosemary is too fresh and bendy in the stem area, you can bake your little trees for 5 minutes at 350 degrees F to dry and strengthen. I have found that truffle oils are least expensive at Trader Joes.
